Raspberry is a spring fruit and it's widely available during this time of the year and tastes great when they are in season. As I wanted to create a spring dessert I thought, Raspberry and yogurt might be a good idea. So I started building all the components to go with it. They are Vanilla sponge cake, pistachio and yogurt frozen parfait. fresh raspberries with honey and lemon with some raspberry sauce. I think you can imagine how all these ingredients taste together. It tasted wonderful and the presentation came out quite well too.
Pistachio Yogurt Parfait
Yogurt 200 g
heavy cream 200 g
sugar 50 g
heavy cream 150 g
sugar 35 g
gelatin sheets 3 ea
egg whites 60 g
sugar 50 g
pistachio finely chopped 40 g
Preparation :
Let the gelatin sheets bloom in iced water
Heat up 150g heavy cream with 35g of sugar. Turn off the heat when it is hot enough to dissolve gelatin. add gelatin then stir well and let it cool down to room temp while getting everything else together.
Take the yogurt into a bowl and hand whisk until smooth
Take 200g of heavy cream with 50g sugar into a bowl and whisk to a soft peak
Take 60g egg whites with 50g sugar into a kitchenaid bowl. Heat it up over a double boiler until it reaches to 140 degrees Fahrenheit. then whisk it to a medium peaks
Add room temp gelatin with heavy cream into yogurt slowly while whisking. Then slowly fold in the whipped cream followed by egg white meringue. Fold in chopped pistachios and fill the mixture into a piping bag and fill up tube shaped mold or any mold as you desire. Freeze for a few hours or overnight.
Plating:
Put raspberry sauce on the plate with the help of a ring cutter.
Put a circle of vanilla sponge cake in the middle of the plate.
Mix some raspberries with lemon and honey and a tiny bit of Maldon sea salt if you have.
Put raspberries on top of the vanilla cake with the help of a ring cutter to the size of the cake circle.
Put the frozen parfait on top of the raspberries, drizzle a little bit of honey on top of the parfait and sprinkle some more pistachios on top.
