Lemon Bar

One bite of this delicious Lemon Bar will give you and your guests an unforgettable experience. It's very simple and easy to make and you don't need a lot of pastry skills to get it done. Anything with lemon can be enjoyed any season or any occasion and Lemons are widely available all around the year.







Recipes

Sugar paste for the bottom

  • Butter cold 450 g

  • confectioner's sugar 120 g

  • salt 4 g

  • vanilla paste 4 g

  • All purpose flour 472 g



Filling

  • Sugar 990 g

  • salt 4.5 g

  • Xanthan gum 1.5 g

  • Turmeric powder 1.5 g

  • Eggs 750 g

  • Lemon juice 300 g

  • lemon zest 4 each

  • Gelatin sheets 9 each



Preparation

Make the sugar paste for the bottom of the pan. I made this in a half sheet pan. If you want to make it in a small cake pan you may need to divide the recipe according to the size of your pan. Do the same with the filling too as this whole recipe is to fill a half sheet pan.


Dice cold butter to 1/2 inch cubes. Keep it cold until you have everything ready for the sugar paste. When you have all the ingredients ready, mix everything together in a food processor. or in a Kitchenaid stand mixer with the paddle attachment. Mix until you get a dough. Do not over mix, just combine all together to form a dough ball and that's it. You can roll the dough with a rolling pin right away if it's not too soft. If the dough came out a little too soft. You can chill the dough in a refrigerator for 30 minutes or so, just to get it cold then it's easy to work with. Roll the dough to desired thickness in between 2 parchments. Then put the sheeted dough on to the half sheet pan with the parchments and cut the excess dough around the edges. you just need to cover the sheet pan bottom and the sides with the dough. chill it for about 20 to 30 minutes to get the dough cold and firm


Get your oven ready while the sugar dough sheet is chilling. When it's ready, fill it with some beans and bake it in a moderate heat about 325 F for 15 to 20 minutes until it turns to light golden brown. Do not bake it for too long as we bake it again with the filling in. Take it out and let it cool down until you get the filling ready.



Filling Preparation :


Put gelatin sheets separated in a bowl of ice water and let them bloom for about 5 minutes. Mix all the dry ingredients sugar, salt, xanthan gum, turmeric together first and then add everything else but the gelatin into it and use a hand mixer or a blender to mix everything together well. you can get the gelatin sheets out of the ice water and melt it down in a microwave and add into the lemon mix and blend well together.

Fill the baked sugar paste sheet pan with the lemon filling and bake at 300 F for about 40 minutes. While baking, put another sheet pan with half way filled water in the oven at the same time to create some steam. The baking time depends on the size of the pan. if you do it in a half sheet pan, 40 minutes should be good. Do not bake it for too long.

Bring it to room temp and chill it or freeze for a few hours before you cut it into desired size. freezing will make it easier to cut. It can be served with some cream and blueberry or raspberry.
