About the Recipe

This traditions Italian Amaretti cookies are great with a coffee. They are soft inside and crunchy out side ant it has a lot of almond flavor and great for almond lovers

Ingredients

  • 720 g Almond flour

  • 326 g Sugar

  • 2.5 g Salt

  • 212 g Egg whites

  • 1 1/4 tsp Almond extract

  • 1 cup confectioners sugar to coat

Preparation

Step 01

In a bowl combine almond flour, sugar, salt together


Step 02

In a electric mixer whisk the egg whites at medium speed to a soft peak and add almond extracts and stop the mixer


Step 03

Fold the egg whites into dry ingredients with a rubber spatula until all combined


Step 04

Scoop cookies with 1 table spoon ice cream scoop and put them into a bowl of confectioners sugar and coat them them with sugar put on a sheet pan with parchment about 1 inch apart from each cookie. or you can even scoop them on to a sheet pan and dust confectioners sugar on top of the cookies. bake at 325 F high fan for about 8 - 10 minutes. Do not over bake them they will dry out. bake just long enough to get light golden color in out side but should be soft inside.
