About the Recipe

This is a delicious cream made out of Mascarpone cream cheese. It goes well with fresh fruits or with scones

Ingredients

  • 225 g Granulated Sugar

  • 5 ea Egg yolks

  • 2 cups Heavy Cream

  • 1 ea Sheet gelatin

  • 4 oz Mascarpone cream

  • 1 tsp Vanilla Extract

Preparation

Step 01

Let gelatin sit in ice cold water until you get everything else ready


Step 02

Whip Egg yolks in a mixing bowl with whisk attachment. in a medium pot Cook Sugar with just enough water to dissolve the sugar. Heat until it reaches to 242 F degrees. once the sugar reach the temperature pour slowly into whisking egg yolks. continue whisking to a thick ribbon like consistency. and set aside


Step 03

set aside a little cream about a 1/4 cup to dissolve gelatin. Whisk mascarpone and remaining whip cream, vanilla extracts together to a soft peak


Step 04

Heat up 1/4 cup cream in a medium pot and add bloomed gelatin and dissolve gelatin in hot cream. Add gelatin to egg yolks mixture and fold slowly to mix with gelatin. add softly whipped cream and mascarpone and fold slowly in a circular motion. You can make this mascarpone cream to build Tiramisu, but you need to flavor the mascarpone cream with a little espresso or coffee extracts.

You can serve this cream on the side with fresh fruits or even with scones.
