About the Recipe

This a great marshmallow recipe for S'mores or some creations with marshmallow. try this out it melts in your mouth its soft and sweet not rubbery or spongy.

Ingredients

  • 200 g Egg whites

  • 1/4 tsp Salt

  • 1 g Cream of Tartar( optional if you don't have )

  • 200 g Sugar

  • 1/2 cup Water

  • 41 g Light Corn Syrup

  • 10 g Gelatin sheets

Preparation

Step 01

Put egg whites, salt, cream of tartar in to a mixer bowl with whisk attachment but do not start to whisk yet


Step 02

Let gelatin sheets bloom in ice water. When the gelatin sheets are bloomed squeeze the exes water out and keep to a side


Step 03

Get water, sugar and light corn syrup into a small pot and bring to a boil on a medium heat. When the syrup almost come to a boil start the mixer to whisk the egg whites and when it come to a double in volume add gelatin into hot liquid and add in to whisking egg whites slowly and speed up to high speed to whisk to a ribbon.


Step 04

While the mixer is whisking, get your half sheet pan or something similar with a flat bottom and put a parchment sheet and spray the parchment well with PAM spray. when the marshmallow nice and thick stop the mixer and put into the sheet pan and spread evenly quickly as it starts to set up fast. Let it freeze for couple hours before cutting into desired shapes
